Our knowledge of salt varieties and their many traditional uses was expanded enormously when we spent three years in the south of France restoring a chateaux owned by an exceptional family of Counts and Countesses. There dining was a transcendent experience, and favorite dishes included, Fleur de Sel laced over sections of guinea fowl (pintade) and winter roots was the specialty of the house, and salads of garden greens crested with a Flake Salt.
