Claudio Corallo Chocolate

This chocolate will change the way you think about dark chocolate. The gist of it is that Claudio Corallo, who personally works plantations on Sao Tome and Principe, puts an enormous amount of focus on the horticulture of cacao tress, and on the early preparation of cacao (cocoa) beans, and then, in effect, lets the beans do the talking. Enormously, almost impossible fermentation times, meticulous attention to drying, draconian hand sorting and processing efforts, and then.... Well, almost nothing. Claudio Corallo seems content to just grind up the beans, add a dash of sugar and cocoa butter, and mold the result in to bars. We know of no other chocolate made is made this way. The result is possibly the most splendid chocolate on the face of the earth.
