The Meadow Smoked Salt Set includes:

  • Halen Môn Gold: From the pure ocean currents of the Welsh coast, Halen Môn finishing salt has a large and immensely complex gemstone structure, making for extraordinary texture in the mouth and exceptional deftness, coaxing every nuance from virtually any dish it finds. When an ancient landmark oak tree fell on the premises of the company that makes the salt, they turned the upsetting moment around and celebrated with this oak-smoked variation of their excellent salt.

  • Sugar Maple: Produced only in very limited quantities, this sea salt is created from a labor-intensive solar evaporation technique developed and perfected by our passionate salt maker on the Maine coast. Sea salt is introduced into green houses where it is warmed and evaporated by the Atlantic sun. Temperature and smoking time are carefully controlled in a process that took our saltmaker years to perfect.

  • Atlantic Mesquite: This sea salt is produced by labor-intensive solar evaporation technique developed and perfected by our passionate salt maker on the Maine coast. Seawater is introduced into green houses where it is warmed and evaporated by the Atlantic sun. The seawater is then moved to pans where salt crystals are allowed to precipitate out. The resulting salt crystals--warm, balanced, and naturally rich in trace mineral--are painstakingly hand-smoked over mesquite.

  • Cyprus Hardwood: Cyprus Hardwood is hand harvested from the Mediterranean Sea after being channeled through a network of dikes and ponds. The massive pyramids are intensely salty, and lend a startling texture and a curious new geometry to food. Cyprus hardwood salt has a sweet, maple-syrup like aroma, giving golden warmth to any food it is strewn across. The smoky-sweet flakes of Cyprus hardwood lend an explosive crunch to fish dishes.

  • Red Alder: This is one of the more aggressive smoked salts, yet produces an amazingly pleasant fragrance when ground over salads, be they lettuces, kelp, or fruit with nuts. Left unground, it is rich and solid enough to marry with beef, game, poultry, and fish. Red Alder Smoked salt also lends itself to pastas or other dishes with cream sauces.

  • Kauai Guava Smoked: A beautiful Hawaiian smoked salt that is made with twice-filtered seawater dried by the sun and hand-harvested, then lovingly smoked slow and low over Kauai's native guava wood. Use it with foods that would benefit from the rich flavors of tropical woods, from toasted cheese sandwiches to grilled fish and mango.
