The 2 inch thick, extra large extra large, rectangular shape presents great opportunities for playing around with your presentation or cooking. For example, flatiron steak can be arranged for searing on one side, while some chili peppers left whole are grilled on the other. Another idea would be to arrange sashimi taking up most of the block on one side, leaving a small area for a pyramid of wasabi and a few paper thin slices of water chestnut on the other.
