Sugpo Asin - Sea Salt from the Philippines

Sugpo Asin is produced from seawater conditioned in large pools prior to feeding the crystallizers. Most salt farms donít bother raising sugpo prawns in their pools because of the extreme difficulty of maintaining the proper pond ecology and shepherding the shrimpís development. But when you do, you get a salt with a tantalizing pale pink color, and a unique intese-sweet flavor.

Sugpo Asin is a hybrid between fleur de sel and sel gris. It is delicate enough for tomatoes and mango, while still coarse and pronounced enough for venison or beef.
