Maboroshi Plum Salt
Maboroshi Plum Salt (Maboroshi no Ume Shio) is based on a culinary institution in Japan: the salt-preserved plum. Umeboshi (pickled or dried plum) is a central ingredient in the Japanese diet. Traditionally homemade, the Umeboshi is made every year by simply packing plums in a jar with sea salt. 20% to 30% of the plum liquid will be extracted from the plum. This plum juice is referred to as plum vinegar.
The Meadow’s Maboroshi Plum Salt is concentrated from this plum vinegar. Maboroshi Plum Salt contains crystallized citric acid from the plum vinegar, and takes all its beautiful plum-pink color naturally from the plum. It is 100% additive-free.
